I love food that is a bit spicy, and this one has so much flavor too!

What you need:

3-4 T Vegetable Oil 1/2 t cumin 2 jalapeno peppers (or other hot chilis), seeded and diced 1/2 red pepper (sweet or hot), diced 4 medium potatoes 3 cups cauliflower florets 1 can garbanzo beans 1 large onion, diced 2 garlic cloves, minced 1 t minced fresh ginger 1 t chili powder 1/4 t turmeric 1/4 c chopped fresh cilantro 1 t salt Crushed red pepper (optional) 2/3 c water

What to do:

Heat oil is large skillet on medium-low heat. Add cumin, hot peppers and onions and saute 2 minutes. Add garlic, chili, ginger and turmeric, stir well, and saute 2 more minutes. Stir in potato, cauliflower and garbanzo beans until coated, then add the 2/3 cup water, cover the pan and simmer 8-10 minutes. Turn off heat, stir in cilantro and salt, cover and let sit 3 minutes. Serve immediately. Sprinkle with crushed red pepper if desired.
