1 pound Hash brown potatoes, frozen & thawed 1 cup onion, diced 1 cup salsa, thick type, any heat 1 cup sour cream 1 can Nacho Cheese soup 8 oz. Cheddar cheese, shredded and divided 1/2 teaspoon chili powder or to taste (Creole Seasoning another option) Salt and pepper to taste

What to do:
Preheat oven to 350° Spray a 2-quart casserole with cooking spray. In large mixing bowl combine all of the ingredients, reserving 1/2 of the cheese. Pour mixture in a prepared casserole and top with remaining cheese. Bake for 1 hour. until cheeses bubbles and begins to brown.
